Lucky Penny Thoughts: I was excited to show this new oven with the low and high settings. The two recipes both used the high settings. Fudge is one recipe that you would cook on low. I decided to go with the Biscuits and the Cinnamon Coffee Cake. I was really happy with the results. Both recipes worked great. When I was making the biscuits, it said it would be really sticky, then later it said press them down. Mine was not sticky, but they did press down really nice.
Cinnamon Coffee Cake
Grease pan with butter or margarine. In Bowl, mix 1 teaspoon baking mix, 1 teaspoon brown sugar, 1/8 teaspoon cinnamon and 1/2 teaspoon butter thoroughly; set aside. In another bowl, mix 2 tablespoons baking mix, 2 teaspoons milk, and 1/2 teaspoon granulated sugar. Spread in pan. Sprinkle cinnamon mixture over top. Bake 13 minutes. Cool in cooling chamber. Cut in wedges.
In Bowl, mix 1/4 cup Bisquick baking mix and tablespoon water to make dough. (Dough will be very sticky.) Drop dough by 1/2 teaspoonfuls into pan. Press tops lightly with fingers to flatten. If you like biscuits with crusty sides, bake 6 at a time. If you like biscuits with soft sides, bake 12 in 1 pan. Bake 13 minutes
